Lov’s Easy Paleo Roast Duck


Roast duck is always delicious and pretty much fool-proof to roast at home. My previous recipe was not Paleo friendly, so I asked my friend Lov to share hers with me. It is a wonderful dish to bring in the New Year.

Lov’s Easy Paleo Roast Duck


1 (5-6 pound) whole duck
1 cored apple
2 tsp ground cinnamon
1 tsp ground cloves

Remove the giblets and organs from the duck cavity. Add cinnamon and cloves to the cored part of the apple, then place the apple inside of the duck cavity. Salt the outside of the duck. Place duck on a rack in a roasting pan, you can add a little water to the pan. Place duck in a 450 degree preheated oven for 10-15 min to seal the skin. Then, lower the temp to 350 degrees and according to Lov: walk away.

Roast for about 75 minutes or until the skin is crispy and perfect on both sides. Lov swears you cannot overcook the duck, as the apple keeps it moist and tender. The meat should attain an internal temperature of 165 degrees.

Serves 2 adults.
