Leah Isaccson has shared her recipe for homemade Paleo (and Vegan for those interested) energy bars that she uses while training for her endurance races. I make these energy bites up for easy one handed eating during the day. They are especially great for busy Moms on the go, for kids anytime, and for workout nutrition. They have no added sugar or chemicals like other energy bars on the market and you can control the sweetness by what other dried fruits or spices you add to them. The recipe calls for only a few ingredients, so it is easy to have them on hand when hunger strikes. I also find they are super easy for kids (even toddlers) to make!
I have included two variations of the recipe: Ginger Snap and Coconut.
Ginger Snap Ingredients:
1 C walnuts
1 tsp cinnamon
1 tsp nutmeg
1⁄2tsp-1tsp fresh ground ginger
1/2 C dates
2 Tbsp shredded coconut
Process the dates in a food processor, until they become a paste. The dates will ball up when done. Remove dates from the processor and set aside.
Next, place nuts and whatever additions you want to add. Process until finely chopped.
Put the processed dates back in the processor and blend together with nut/spice mixture. Place into a bowl and form one large ball.
Place in between some plastic wrap or wax paper and roll out to desired thickness and then cut. Or instead of doing the above, you can just take tablespoon amount of the mixture and roll into little balls.
Place in refrigerator til firm.
