It has been an indulgent month with a summer vacation, a few birthdays and an anniversary. One way we like to celebrate (and fall off the Paleo Wagon) in our family is with gluten free pancakes. I’ve experimented with a bunch of different recipes including Paleo ones. In the process, I have come up with an easy recipe that doesn’t even require you to measure out the ingredients. Here’s my recipe! Although it is a little vague, I hope you can replicate it.
5 pastured eggs
About one half a generous cup of organic unsweetened applesauce
Enough Bob’s Red Mill Gluten Free biscuit and baking mix
to form the right consistency for pancakes (less then one cup)
Scoop by the 1/4 cup onto a well buttered cast iron pan or griddle.
Will feed between 2-4 people depending on how much bacon is on the table.
