I found a great grain free cupcake cookbook at the local library. The recipes are so delicious I am actually going to buy the book! It is called Gluten Free Cupcakes by Elana Amsterdam. All of the recipes are made from either coconut or almond flours.
For my recent birthday, we made the Vanilla Cupcakes.
Here’s the version I made:
1/2 cup coconut flour
1/2 tsp. sea salt
1/4 tsp. baking soda
4 large farm eggs
1/3 cup butter
1/2 cup raw honey
1 tbsp vanilla extract
Mix everything together and scoop into 9 lined muffin tins. Bake at 350 for about 20 min.
We frosted them with cream cheese frosting:
6 tablespoons of heavy organic whipping cream
4 ounces organic cream cheese
2 tablespoons of raw honey
