I have a thing about butter. I love it. My preferred method of eating it is cold, sliced and directly off the knife. Yesterday I ate about 3/4 of a stick. It started off on my chard and broccoli and when I finished the veggies I tucked into the butter. I am burning through a lot of calories these days and I was hungry for pure fat energy.
Hearing this may horrify you. I used to feel the same way. I grew up with a mom who put butter on everything: danish, pizza crust, lots of bread. I wasn’t into it then. However, I discovered good quality pastured (meaning grass fed) butter and it tastes so delicious to me that I can eat it ‘as is’. There are many health benefits in butter, especially the grass fed kind. Butter consists of short chain fats. These fats are used immediately for energy- especially in the absence of sugary processed carbohydrates.
