All lunch meat is not created equal. If you can find organic and minimally processed meat at the deli counter, I think it is a fantastic product to use as you need to in your meal planning. Ask the butcher about the meat or research the brand yourself to make sure there is no added gluten/grain or sugars. In a pinch if it can save you from eating an actual sandwich, you’ll be happy to have the option!
Here’s my favorite way to eat lunch meat:
Romaine lettuce leaves
Layer meat and a slice or two of avocado on a leaf of lettuce roll up or eat open faced. Repeat as needed. The options are endless here as well: roasted peppers, sun dried tomatoes, capers, other sliced veggies,etc.
